  • Ingredients

    • 1, 15 oz. Can of white beans, drained, rinsed

    • 1 Avocado, diced

    • 2 Hard-boiled egg, peeled, chopped

    • 1⅓ cup spinach

    • ½ cup bacon crumbles

    • Salt and pepper to taste

    • 4 Mission® Whole Wheat Tortillas

  • Instructions

    • In a mixing bowl, combine white beans, avocado, and hard boiled eggs. Stir with a wooden spoon, slightly crushing the ingredients to bind. Season with salt and pepper.

    • To create one wrap, scoop about ½ cup of the bean mixture onto a tortilla with ⅓ cup loosely packed spinach, 1 tbsp. chopped sun dried tomatoes, and 2 tbsp. bacon crumbles. Fold in one end and roll to create a wrap.
