  • Ingredients

    • 4 Mission® Carb Balance Whole Wheat Soft Taco Tortillas

    • 1 lb. Salmon filets, skinned

    • Blackening seasoning to taste

    • Vegetable oil as needed

    • ¾ cup Avocado, diced

    • ¼ cup Light mayonnaise

    • ¼ cup Red onion, sliced

    • ¼ cup Arugula

    • ¼ cup Grape tomatoes, halved

  • Instructions

    • Oil grill rack; preheat grill to high.

    • Rub salmon on both sides with blackening seasoning to taste. Grill until cooked through, 4 to 5 minutes per side.

    • Mash avocado and mayonnaise in a small bowl.

    • To assemble: Spread 2 tbsp. avocado and mayonnaise mixture onto each tortilla. Top the spread with ½ cup grilled salmon, 1 tbsp. sliced red onion, 1 tbsp. arugula, and 1 tbs. grape tomatoes. Roll into a wrap. Repeat for each tortilla. Serve.
