4 Mission® Carb Balance Whole Wheat Soft Taco Tortillas
1 lb. Salmon filets, skinned
Blackening seasoning to taste
Vegetable oil as needed
¾ cup Avocado, diced
¼ cup Light mayonnaise
¼ cup Red onion, sliced
¼ cup Arugula
¼ cup Grape tomatoes, halved
Oil grill rack; preheat grill to high.
Rub salmon on both sides with blackening seasoning to taste. Grill until cooked through, 4 to 5 minutes per side.
Mash avocado and mayonnaise in a small bowl.
To assemble: Spread 2 tbsp. avocado and mayonnaise mixture onto each tortilla. Top the spread with ½ cup grilled salmon, 1 tbsp. sliced red onion, 1 tbsp. arugula, and 1 tbs. grape tomatoes. Roll into a wrap. Repeat for each tortilla. Serve.
