4 Mission® Garden Spinach Herb Wraps
4 country-style pork ribs (boneless)
1 bag fresh spinach
2 banana peppers, sliced
1 red onion, sliced
½ cup chipotles in adobo sauce, divided
½ cup mayonnaise
¼ cup cilantro, chopped
2 Tbsp. fresh lime juice
Salt and pepper
Brush pork ribs with olive oil. Season with salt, pepper and garlic powder to taste. Brush adobo sauce on pork ribs and broil until done (turn part way through cooking). Pull or cut meat. Set aside.
For dressing, mix mayonnaise, ¼ cup adobo sauce and cilantro in a small bowl. Add lime juice and sprinkle salt and pepper to taste. Stir well.
Heat Mission Wraps in a hot skillet 15 seconds on each side. Keep warm.
On each wrap, place a portion of spinach in center. Add banana peppers and red onions. Arrange ribs on top. Drizzle with dressing.
Fold bottom edge and roll from left to right. Serve.
