  • Ingredients

    • 12 Mission® Medium/Soft Taco Flour Tortillas, warmed

    • 4 Large Eggs, beaten

    • 2 cups Whole Milk

    • 1 tbsp. Dijon Mustard

    • Salt and Pepper to taste

    • 1 lb. Cooked Greek or Italian Sausage

    • 1½ cup Crumbled Feta Cheese, divided

    • ½ cup Diced Multi-colored Bell Pepper

    • 2 tbsp. Chopped Green Onion

    • 1 cup Chopped Romaine Lettuce

    • 1 Small Red Onion , julienned

    • 1 Small Diced Roma Tomato

    • ¼ cup Kalamata Olives

  • Instructions

    • Preheat conventional oven to 350°F.

    • To form quiche shells: Press warmed tortillas into a jumbo muffin tin, pleating edges to make fit.

    • To make Feta Mini Quiches: Combine beaten eggs, milk, Dijon, and season with salt and pepper to taste. Divide cooked Greek or Italian Sausage, 1 cup of feta, diced peppers, and green onions among quiche shells evenly. Fill each ¾ full with reserved egg mixture. Bake for 16 to 18 minutes or until egg is completely set.
