6 cups Mission® Organics Tortilla Chips
1 ½ lbs. Ground Lamb
2 tbsp. Greek Seasoning
1 tbsp. Hot sauce (or more for extra spicy)
1 cup Low fat shredded jack cheese
1 pt. each farmers market cherry/yellow tomatoes (halved)
1 English cucumber (peeled, seeded and chopped)
1 cup Pitted Kalamata olives (halved)
½ Red onion (cut into thin slices)
1⁄2 lb. Feta cheese, crumbled
Combine Greek seasoning with ground lamb. Using medium fry pan, cook meat until done, crumble and add hot sauce. Set aside.
Combine tomatoes, cucumber, olives and onion with Mediterranean Dressing and gently toss. Set aside.
Place ¼ Mission Organics Tortilla Chips on microwave safe plate.
Top chips with ¼ meat mixture and ¼ jack cheese. Place in microwave 30-40 sec or until cheese melts.
Top chips and melted cheese with tomato, cucumber, olive, onion dressing mixture.
Sprinkle with Feta and a dollop of Tzatziki sauce.
Serve Immediately. Repeat for remaining servings.
