12 Mission® Medium/Soft Taco Flour Tortillas, warmed
4 Large Eggs, beaten
2 cups Whole Milk
1 tbsp. Dijon Mustard
Salt and Pepper to taste
1 lb. Cooked Greek or Italian Sausage
1½ cup Crumbled Feta Cheese, divided
½ cup Diced Multi-colored Bell Pepper
2 tbsp. Chopped Green Onion
1 cup Chopped Romaine Lettuce
1 Small Red Onion , julienned
1 Small Diced Roma Tomato
¼ cup Kalamata Olives
Preheat conventional oven to 350°F.
To form quiche shells: Press warmed tortillas into a jumbo muffin tin, pleating edges to make fit.
To make Feta Mini Quiches: Combine beaten eggs, milk, Dijon, and season with salt and pepper to taste. Divide cooked Greek or Italian Sausage, 1 cup of feta, diced peppers, and green onions among quiche shells evenly. Fill each ¾ full with reserved egg mixture. Bake for 16 to 18 minutes or until egg is completely set.
