4 Mission® Carb Balance Whole Wheat Soft Taco Tortillas
1 cup Zucchini, diced
½ cup Yellow onion, diced
1 cup White beans, prepared
1 tbsp. Olive oil
4 Eggs, scrambled
Salt and pepper to taste
1 cup Cheddar cheese, shredded
1 cup Green chili salsa, prepared
Pre-heat a conventional oven to 350°F. Spray a baking dish with non-stick cooking spray.
In a sauté, over medium-high heat, heat 1 tbsp. of the olive oil. Add zucchini, onions, and white beans and sauté until the vegetables are soft, 4 to 5 minutes. Reserve warm for assembly.
To assemble: Warm the tortillas by heating in a sauté pan over medium-low heat, or place into a storage bag with a damp paper towel and microwave for 20-30 seconds. Place ½ cup zucchini and onions mixture into each tortilla. Top the mixture with ¼ cup scrambled eggs and ¼ cup shredded cheddar cheese. Roll, burrito-style, and place into prepared baking dish. Repeat for each tortilla shell. Pour the green chili salsa over the top and bake for 15 minutes, or until warmed through. Serve.
